Chocolate and peanut butter are the perfect pair. Great by themselves, and even better together. Make these heavenly cupcakes for your special angel this Valentine’s Day. (Since kids love chocolate too, these cupcakes would also be great for birthday or Valentine’s Day parties!)

Yield: 15 cupcakes

Serving size: 1 cupcake

Ingredients for the cake:

  • 2 cups super fine almond flour
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 9 tbsp. unsalted butter, softened
  • 1 tsp. pure vanilla extract
  • 3 large eggs
  • 1/2 cup heavy cream
  • 2 tbsp. sour cream
  • 6 tbsp. raw cacao powder
  • 1/2 cup natural, non-GMO granular erythritol
  • 1 cup very hot water

Ingredients for the frosting:

  • 1/2 cup unsalted butter, softened
  • 1 cup organic natural peanut butter
  • 1/4 cup + 2 tbsp. heavy cream
  • 1 tsp. pure vanilla extract
  • 1/2 cup natural, non-GMO powdered/confectioners erythritol

Directions:

  1. Preheat your oven to 350° F.
  2. Line a standard cupcake tin with cupcake liners
  3. In a large bowl, combine the almond flour, baking powder, baking soda, and cacao powder. Whisk well to break up any clumps and to incorporate.
  4. In a smaller bowl, cream the butter with the erythritol.
  5. Add in the vanilla, eggs, cream, and sour cream, beating well after each addition.
  6. Add the wet ingredients to the dry, and mix well to fully incorporate.
  7. Pour in the hot water, and mix well to achieve a thin batter.
  8. Use a ladle to fill each cupcake liner about 3/4 of the way full.
  9. Bake in the center of the preheated oven for about 25 minutes, or until a toothpick inserted into the middle of a cupcake comes out clean and the cupcake springs back when pressed gently.
  10. Place the cupcakes on a wire rack to cool completely.
  11. While the cupcakes cool, prepare the peanut butter frosting as described below.
  12. Place all the ingredients for the frosting into a bowl. Beat at medium speed with an electric hand mixer until you have a smooth, fluffy frosting.
  13. When the cupcakes are completely cool, spoon or pipe the frosting onto each cupcake. Garnish with chocolate shavings, if desired.
