These lusciously lemony muffins come topped with a sweet lemon glaze. Moist, light, and absolutely delicious, they’re great served with brunch or your evening tea.

Yield: 10 muffins

Serving size: 1 muffin

Ingredients for the muffins:

  • 3 tbsp. (42.6g) unsalted butter, softened
  • 1/2 cup (96g) granular erythritol
  • 1/2 tbsp. (7.5g) pure vanilla extract
  • 1 tsp. grated lemon peel
  • 6 large eggs
  • 1/2 cup (115g) sour cream
  • 4 tbsp. (56.7g) lemon juice
  • 1/2 cup (56g) coconut flour
  • 1/2 tbsp. (7.2g) baking powder
  • 1 pinch of salt

Ingredients for the lemon glaze:

  • 1/2 cup (120g) powdered erythritol
  • 1 tbsp. (7.09g) lemon juice
  • 4 tbsp. (56.7g) heavy whipping cream
  • 1 1/2 tbsp. (22.2g) water

Directions for the muffins:

  1. Preheat the oven to 350 °F (180 °C) and line a muffin tin with paper liners.
  2. Cream the butter, erythritol, vanilla, and lemon peel in a large bowl using an electric mixer.
  3. Add in the eggs, one at a time, beating well after each egg.
  4. Add in the sour cream and lemon juice. Blend well.
  5. Add the coconut flour, baking powder, and salt to a separate bowl. Use a wire whisk to combine and break up any lumps.
  6. Add the dry ingredients to the bowl with the wet ingredients and beat well to combine. Scrape the bowl down as needed.
  7. Use a soup ladle or an ice cream scoop to distribute the batter evenly between 10 muffin cups.
  8. Bake the muffins for about 3o minutes or until they’re lightly golden brown and a toothpick inserted into the center comes out clean. 
  9. Remove them from the oven and place them on a wire rack until they’re cool enough to be handled.
  10. Remove them from the pan and finish cooling on the rack.
  11. Do not glaze the muffins until they have cooled completely.
  12. Prepare the lemon glaze as described below.

Directions for the glaze:

  1. Place all the glaze ingredients into a bowl.
  2. Using an electric mixer, blend until it forms a glaze.

To glaze the muffins:

  1. Line a baking sheet with parchment paper or aluminum foil.
  2. Arrange the muffins on the baking sheet.
  3. Use a fork to drizzle the lemon glaze decoratively across the tops of the muffins.
