These lusciously lemony muffins come topped with a sweet lemon glaze. Moist, light, and absolutely delicious, they’re great served with brunch or your evening tea.

Ingredients for the muffins:
- 3 tbsp. (42.6g) unsalted butter, softened
- 1/2 cup (96g) granular erythritol
- 1/2 tbsp. (7.5g) pure vanilla extract
- 1 tsp. grated lemon peel
- 6 large eggs
- 1/2 cup (115g) sour cream
- 4 tbsp. (56.7g) lemon juice
- 1/2 cup (56g) coconut flour
- 1/2 tbsp. (7.2g) baking powder
- 1 pinch of salt
Ingredients for the lemon glaze:
- 1/2 cup (120g) powdered erythritol
- 1 tbsp. (7.09g) lemon juice
- 4 tbsp. (56.7g) heavy whipping cream
- 1 1/2 tbsp. (22.2g) water
Directions for the muffins:
- Preheat the oven to 350 °F (180 °C) and line a muffin tin with paper liners.
- Cream the butter, erythritol, vanilla, and lemon peel in a large bowl using an electric mixer.
- Add in the eggs, one at a time, beating well after each egg.
- Add in the sour cream and lemon juice. Blend well.
- Add the coconut flour, baking powder, and salt to a separate bowl. Use a wire whisk to combine and break up any lumps.
- Add the dry ingredients to the bowl with the wet ingredients and beat well to combine. Scrape the bowl down as needed.
- Use a soup ladle or an ice cream scoop to distribute the batter evenly between 10 muffin cups.
- Bake the muffins for about 3o minutes or until they’re lightly golden brown and a toothpick inserted into the center comes out clean.
- Remove them from the oven and place them on a wire rack until they’re cool enough to be handled.
- Remove them from the pan and finish cooling on the rack.
- Do not glaze the muffins until they have cooled completely.
- Prepare the lemon glaze as described below.
Directions for the glaze:
- Place all the glaze ingredients into a bowl.
- Using an electric mixer, blend until it forms a glaze.
To glaze the muffins:
- Line a baking sheet with parchment paper or aluminum foil.
- Arrange the muffins on the baking sheet.
- Use a fork to drizzle the lemon glaze decoratively across the tops of the muffins.
