Spinach artichoke dip always makes me think of birthday dinners and other special times with my family, so I wanted this recipe to be perfect. I’ve added a few spices and just the right amounts of cheeses in my recipe to elevate an old standard to new heights. If you’re a fan of spinach artichoke dip, I feel confident that this version will become your new favorite, and it’s so simple to make that you’ll want to make it over and over again!

Serve this delicious, gooey, cheesy appetizer with your favorite Toasties crackers and raw veggies like red bell pepper slices or celery sticks to dip.

Ingredients:

  • one 14-ounce can (396.9g) of whole artichokes in brine, drained
  • 8 oz (226.8g) frozen chopped spinach, cooked and cooled
  • 8 oz (226.8g) cream cheese, softened
  • 1 cup (112g) whole milk mozzarella cheese, freshly shredded
  • 1/2 cup (115g) sour cream
  • 1/2 cup (120g) mayonnaise 
  • 1/2 cup (42.53g) parmesan cheese, freshly grated
  • 1/2 cup (42.53g) romano cheese, freshly grated
  • 2 tsp. (0.15g) freeze-dried chives
  • 1/4 tsp. (0.78g) garlic powder
  • 1/4 tsp. (0.25g) dried dill weed
  • 1/8 tsp. (0.13g) dried thyme
  • 1/8 tsp. (0.75g) salt
  • 1/8 tsp. (0.29g) black pepper
  • 1/8 tsp. (0.29g) paprika

Directions:

  1. Preheat the oven to 350° F (180°C) and butter a 9″ (22.86cm) glass pie pan or small casserole dish.
  2. Use a sharp knife to finely dice the drained artichokes and place them into a large bowl.
  3. Taking small handfuls at a time, use your hands to squeeze as much liquid as possible from the cooked and cooled spinach and add it to the bowl.
  4. Add the rest of the ingredients to the bowl, and mix well to combine evenly.
  5. Spread the mixture evenly into the prepared pan or casserole dish. (To make this dip a day or two ahead of time: stop at this point, tightly cover it with plastic wrap, and store it in the fridge until you’re ready to bake it ).
  6. Bake in the center of the preheated oven for about 20-30 minutes or until melted and gooey.
  7. Brown for a few minutes under the broiler if you like.
  8. Allow the dip to cool slightly before serving.
