This tasty recipe is simple to make and delicious. The marinade is great on its own or can be used as a base for many different marinades. You can easily change things up just by swapping the lime juice out for some lemon juice or by adding in additional herbs such as rosemary or thyme.
When I cook I always make extra, because to me there’s no simpler way to cut down on kitchen time than to have leftovers for the next day’s lunch or dinner. That being said, this recipe can easily be adjusted up to feed a larger crowd, or down to make a lovely meal for two.
Yield: 12 pork chops
Serving size: 2 pork chops
Ingredients:
- 4 tbsp. fresh lime juice
- 1/2 cup extra virgin olive oil
- 1 tbsp. garlic powder
- 1 tsp. salt
- 1 tsp. black pepper
- 12 boneless center-cut pork loin chops
Directions:
- Combine the lime juice, oil, garlic, salt, and pepper in a bowl. Mix well.
- Arrange the pork chops in a large baking dish.
- Pour the marinade over the meat. Turn each pork chop over in the marinade, to coat all sides.
- Cover the baking dish, and place in the refrigerator for at least 4 hours, to marinate. Turn the meat at the halfway mark for even marinating.
- The pork chops may be grilled on the barbecue, cooked under the broiler, or air fried at 400° F. Cook them for 6-9 minutes per side until they are fully cooked. Cooking time may vary due to the cooking method and the thickness of the meat. (Pork chops should be cooked to an internal temperature of 145°F-160° F, followed by a three-minute rest.)
