Ingredients:
- 1 lb. (453.59g) white mushrooms, cleaned and stemmed
- 8 oz garlic and herb goat cheese, softened
- 3 oz whole milk mozzarella, freshly shredded
Directions:
- Preheat the oven to 350° F (180°C) and butter the bottom of a 9″x13″ (22.86 cm x 33.02 cm) casserole dish.
- Combine 2 ounces of the shredded mozzarella with the softened goat cheese in a bowl. Mix well to incorporate.
- Use a spoon to stuff each mushroom with the mixture. Each mushroom should be filled with cheese and have a nice mound of the filling on top.
- Sprinkle the remaining mozzarella equally over the tops of the stuffed mushrooms.
- Bake in the preheated oven for 20-25 minutes until the tops begin to turn golden brown.
- Cool for five minutes before serving.
- Once cool, store any leftovers in a covered container in the refrigerator.
