Simple food is often the most delicious, and this colorful, tasty side is no exception. It’s an excellent addition to almost any meal and only takes a few minutes to prepare. While delicious on its own, this dish is also good when topped with parmesan cheese and red pepper flakes.

Yield: 3 1/2 cups

Serving size: 1/2 cup

Ingredients:

  • 4 cups (280g) shredded cabbage (approximately half a medium cabbage)
  • 1/4 of a medium red bell pepper
  • 2 green onions, tops only
  • 2 tbsp. (28g) extra virgin olive oil
  • 1 1/2 tbsp. (21.3g) salted butter
  • salt and ground black pepper 
  • optional ingredients: grated parmesan cheese, red pepper flakes

Directions:

  1. Begin by preparing the vegetables as follows. 
  2. Remove any brown or damaged leaves from the outside of your cabbage. Rinse under cool water, and pat dry with a clean towel or paper toweling.
  3. Using a sharp knife, cut the cabbage in half and cut away the core. To shred the cabbage, cut it into pieces that will fit into the feed tube of a food processor, and using the grating blade, shred the cabbage. You can use a box grater instead if you don’t have a food processor. Set aside while you prepare the peppers and green onions.
  4. Julianne the peppers and thinly slice the green tops of the green onions.
  5. Heat the oil over medium heat in a large skillet or frying pan.
  6. Add the prepared vegetables to the pan, and saute them for a minute or two, mixing occasionally. Cover the pan and saute, occasionally stirring, for another few minutes until the vegetables are tender.
  7. Turn off the heat. Mix in the butter until it’s melted and fully incorporated into the dish. 
  8. Season with salt and pepper to taste.
  9. Enjoy topped with optional ingredients if desired.
