Simple food is often the most delicious, and this colorful, tasty side is no exception. It’s an excellent addition to almost any meal and only takes a few minutes to prepare. While delicious on its own, this dish is also good when topped with parmesan cheese and red pepper flakes.
Yield: 3 1/2 cups

Ingredients:
- 4 cups (280g) shredded cabbage (approximately half a medium cabbage)
- 1/4 of a medium red bell pepper
- 2 green onions, tops only
- 2 tbsp. (28g) extra virgin olive oil
- 1 1/2 tbsp. (21.3g) salted butter
- salt and ground black pepper
- optional ingredients: grated parmesan cheese, red pepper flakes
Directions:
- Begin by preparing the vegetables as follows.
- Remove any brown or damaged leaves from the outside of your cabbage. Rinse under cool water, and pat dry with a clean towel or paper toweling.
- Using a sharp knife, cut the cabbage in half and cut away the core. To shred the cabbage, cut it into pieces that will fit into the feed tube of a food processor, and using the grating blade, shred the cabbage. You can use a box grater instead if you don’t have a food processor. Set aside while you prepare the peppers and green onions.
- Julianne the peppers and thinly slice the green tops of the green onions.
- Heat the oil over medium heat in a large skillet or frying pan.
- Add the prepared vegetables to the pan, and saute them for a minute or two, mixing occasionally. Cover the pan and saute, occasionally stirring, for another few minutes until the vegetables are tender.
- Turn off the heat. Mix in the butter until it’s melted and fully incorporated into the dish.
- Season with salt and pepper to taste.
- Enjoy topped with optional ingredients if desired.
